The Michael J. Bryant Memorial Fund: 2010 Award Recipients
The Michael J. Bryant Memorial Fund made its first awards in the second quarter of 2010. Click here for details on the initial grants. Mike was a co-founder of Calkins Creamery, and the creamery donates a portion of the profits from Smoke Signal to the fund annually. The fund is also supported via contributions from the public (thank you to everyone who has donated). The fund is adminstered by Mike's siblings: Carrie Bomgardner, Zack Bryant and Emily Montgomery. Thanks Mike!
Innovation in Aging: The Caves
Beginning this Spring Cheesemaker Emily will be aging her raw milk cheeses in one of three separate caves. Cave 1, at the creamery, will be dedicated to semi-hard cheeses of 2-3 months, like Highlander and 1841. Cave 2, also at the creamery, will be dedicated to creating a special micro-environment for Noble Road. Cave 3, at Calkins Creek Vineyard (pictured below), will be dedicated to aged natural rinds, such as Lida Gold, Pastured Paulin, Daisy and Gruyere.
